
Fiery Duck Stir-Fry
A fiery Asian duck breast stir-fry with fresh ginger, scallions and bean sprouts, finished with chili garlic sauce, soy sauce and sesame oil, served over rice noodles.

Score the duck breast skin in a crosshatch pattern, season, then place skin-side down in a hot pan to render the fat, about 10 minutes.
Add the ginger and scallions, cooking until fragrant, about 3 minutes.
Stir in the bean sprouts, chili garlic sauce, soy sauce and sesame oil for 4 minutes.
Cook the rice noodles separately according to package directions.
Let the duck rest for about 5 minutes, then slice thinly.
Taste and adjust the seasoning.
Serve hot over the rice noodles, garnished with fresh herbs.
