Ingredients

500gbeef sirloin, thinly sliced against the grain
400gbroccoli, cut in florets
4 clovesgarlic, minced
2cmfresh ginger, minced
3 tbspoyster sauce
2 tbspsoy sauce
1 tbspdark soy sauce
1 tspsesame oil
1 tspcornflour
1 tspbicarbonate of soda
3 tbspvegetable oil
100mlbeef stock

Instructions

Velvet beef: toss with bicarbonate of soda and cornflour, rest 20 minutes, rinse well.

Blanch broccoli in boiling water 2 minutes, drain.

Mix oyster sauce, soy, dark soy, sesame oil and stock in a bowl.

Heat wok until smoking, add oil, stir-fry beef over maximum heat until just browned.

Remove beef, add garlic and ginger to wok.

Add broccoli and stir-fry 1 minute.

Return beef, add sauce, toss until glossy and serve immediately with rice.
