Ingredients

8bone-in chicken pieces
2 tinscrushed tomatoes
1large onion, sliced
2red capsicums, sliced
4 clovesgarlic, minced
1 cupdry white wine
1 cupgreen or black olives
2 tbspcapers
1 tspdried oregano
2 tbspolive oil
salt and pepperto taste
fresh parsley and pasta or polentato serve

Instructions

Brown chicken pieces all over. Remove.

Sauté onion, capsicum and garlic 5 minutes.

Add wine, tomatoes, olives, capers and oregano.

Return chicken. Simmer 45-55 minutes.

Scatter parsley. Serve with pasta or polenta.
