A satisfying Tex-Mex salad with spiced beef, beans, corn and crunchy tortilla chips. Draining the fat from the browned beef before seasoning it keeps the salad from turning greasy once it's piled over the lettuce.

500gbeef mince
1 packettaco seasoning
1 canblack beans, drained
1 cancorn kernels, drained
1 headromaine lettuce, chopped
2tomatoes, diced
1avocado, diced
150gcheddar cheese, grated
1/2 cupsour cream
1/2 cupsalsa
tortilla chipsto serve
Instructions

Brown beef in a pan, drain fat. Add taco seasoning and 1/4 cup water. Simmer 5 minutes.

Layer lettuce in bowls. Top with beef, beans, corn, tomato and avocado.

Sprinkle over cheese and add a dollop of sour cream and salsa.

Tuck in tortilla chips and serve immediately.
