500gwhite fish fillets (mahi-mahi or cod), cut into strips
1 cupplain flour
1 tspbaking powder
1 cupcold beer
salt and pepperto taste

2 cupsred cabbage, shredded
1lime, juiced
1/2 cupsour cream
2 tspchipotle in adobo, finely chopped
12small corn tortillas

Make batter: whisk flour, baking powder, beer and season.

Mix slaw: toss cabbage with lime juice and salt.

Mix chipotle crema: combine sour cream and chipotle.

Dip fish in batter. Fry at 180°C for 3-4 minutes until golden.

Fill warm tortillas with fish, slaw and chipotle crema. Finish with coriander.
