Grilled Salmon with Lemon Dill Sauce

Pan-seared salmon fillets with a bright lemon and dill cream sauce. Starting the salmon skin-side down in a hot pan and leaving it undisturbed renders the skin properly crisp instead of leaving it soft and rubbery.

Ingredients

4salmon fillets, skin-on
2 tbspolive oil
1/2 cupthickened cream
2 clovesgarlic, minced
zest and juice of 1lemon
2 tbspfresh dill, chopped
1 tbspbutter
salt and pepperto taste
steamed greensto serve

Instructions

Season salmon with salt and pepper.

Heat olive oil in a pan over medium-high heat. Cook salmon skin-side down for 4 minutes until crispy.

Flip and cook another 2-3 minutes. Remove and rest.

In the same pan, sauté garlic 30 seconds. Add cream, lemon zest and juice. Simmer 3 minutes.

Stir in dill and butter. Season. Spoon sauce over salmon and serve with steamed greens.
