Prawn Madras

Prawn Madras

A hot British-Indian restaurant classic — prawns in a deep-red coconut and tomato sauce. Cooking the spices for a full minute before the tomatoes go in wakes up their flavour instead of leaving the sauce tasting raw and dusty.
