4whole snapper or firm white fish fillets
200mlwhite vinegar
1onion, thinly sliced
1carrot, julienned
1scotch bonnet chilli, deseeded and sliced
1 tspallspice berries
1 tspsugar
salt and pepperto taste

Instructions

Season fish with salt and pepper. Pan-fry in oil 3–4 minutes per side until golden and cooked through.

Simmer vinegar, vegetables, allspice and sugar together 5 minutes.

Pour hot pickle over fried fish.

Allow to marinate at least 30 minutes — longer is better.

Serve at room temperature with festival bread.
