Rub the inside of the fondue pot with a cut garlic clove.
Warm the wine over medium heat until it just starts to simmer.
Toss the grated cheese with cornstarch first, then add it to the wine gradually in small handfuls, stirring in a figure-8 motion until each addition melts before adding more, this keeps the fondue smooth instead of turning stringy.
Once all the cheese is melted and glossy, transfer to a fondue burner and serve immediately with cubes of crusty bread for dipping.
