
Corn Chowder (Classic)
A thick, creamy American corn chowder with bacon and potato. Mashing some of the cooked potato directly in the pot thickens the chowder naturally, without relying on extra cream.

5ears of corn, kernels cut off, or 2 tins corn
4 rashersthick-cut bacon, diced
1large onion, diced
3medium potatoes, diced
3 clovesgarlic, minced
3 cupschicken stock
1 cupcream
2 tbspbutter
2 tbspplain flour
1 tspthyme
salt and cracked pepperto taste
chives and hot sauceto serve
Instructions

Cook bacon until crispy. Remove. Leave fat in pan.

Sauté onion and garlic in bacon fat with butter. Stir in flour.

Add stock and potatoes. Simmer 15 minutes.

Add corn and cream. Simmer 10 more minutes.

Mash some potato for creaminess. Season. Serve with bacon, chives and hot sauce.
