
Mushroom and Truffle Pizza
Wild mushrooms, truffle oil and fontina on a white sauce base — earthy, rich and elegant. Sautéing the mushrooms until properly dry before they go on the pizza stops them releasing water and turning the base soggy.

1pizza dough ball, 280g
100mlwhite bechamel sauce
200gmixed wild mushrooms, sliced and sauteed
150gfontina or mozzarella, sliced
2 clovesgarlic, minced
1 tbsptruffle oil
1 handfulfresh thyme
30gparmesan, grated
Instructions

Preheat oven to maximum with stone inside.

Saute mushrooms with garlic until golden and dry.

Stretch dough to a 30cm circle.

Spread white sauce thinly over dough.

Add fontina and mushrooms.

Scatter with parmesan and thyme.

Bake 8-10 minutes until golden.

Drizzle truffle oil over immediately and serve.
