
Quebec Onion Soup
A Quebec-style French onion soup with plenty of Gruyère and a thick crouton lid. Cooking the onions low and slow for a full 45 minutes, without rushing the heat, develops their deep, sweet caramelised flavour.

6large onions, thinly sliced
4 tbspbutter
2 tbspolive oil
1 tspsugar
1 cupdry white wine
1.5Lbeef or vegetable stock
4 thick slicessourdough, toasted
200gGruyere, grated
1 tbspfresh thyme
salt and pepperto taste

Melt butter and oil in a heavy pot. Add onions and sugar. Cook over medium-low heat 45 minutes until deeply caramelised.

Add wine and thyme. Cook 5 minutes.

Add stock. Simmer 20 minutes. Season.

Ladle into oven-safe bowls. Top with toast and mound of Gruyere.

Grill until cheese is golden and bubbling.
