200gjasmine rice
1.5Lchicken stock
200gpork tenderloin, thinly sliced
2century eggs (pidan), cubed
2 tbspsoy sauce
1 tbspShaoxing wine
3cmginger, julienned
fried shallots, spring onion, sesame oilto serve

Instructions

Simmer rice in chicken stock 45 minutes, stirring frequently, until broken down and creamy.

Marinate pork slices in soy and wine 10 minutes.

Add pork to congee, stir gently until cooked through, 3 minutes.

Add century egg cubes.
