
Turnip Cake (Lo Bak Go)
Savoury Cantonese dim sum made with grated radish and rice flour, pan-fried until crispy. Squeezing the excess water out of the salted daikon keeps the turnip cake firm enough to slice and pan-fry rather than falling apart.

Ingredients
600gdaikon radish, grated
200grice flour
2 tbspdried shrimp
3dried shiitake mushrooms, soaked and diced
2 tbspsoy sauce
1 tspsesame oil
salt and white pepperto taste
vegetable oilfor pan-frying
Instructions

Salt grated daikon, rest 10 minutes, squeeze out excess water.

Mix daikon with rice flour, shrimp, mushroom, soy and sesame oil. Season.

Pack into a greased loaf tin.

Steam 40 minutes until set. Cool completely.

Slice and pan-fry in oil until crispy on both sides. Serve with soy sauce.
