Ingredients

600gpork spare ribs, cut into small pieces
3 tbspfermented black beans, rinsed and mashed
3 clovesgarlic, minced
2 tbspsoy sauce
1 tbspShaoxing rice wine
1 tspsugar
1 tspcornflour
1 tspsesame oil
1 red chillisliced, optional

Instructions

Combine ribs with black bean, garlic, soy, wine, sugar, cornflour and sesame oil.

Marinate 30 minutes.

Place on a heatproof plate.

Steam over high heat 20–25 minutes until ribs are completely tender.

Garnish with chilli and serve.
