200gshortcrust pastry
200glardons or diced bacon
4eggs
300mldouble cream
100mlwhole milk
150gGruyere, grated
salt, pepper and nutmegto taste

Line a 23cm tart tin with pastry. Blind bake at 190°C for 15 minutes.

Fry lardons until golden. Drain.

Whisk eggs, cream, milk and nutmeg. Season.

Scatter lardons and Gruyere in tart shell.

Pour custard over.

Bake at 175°C for 25–30 minutes until just set with a slight wobble.

Cool slightly before slicing.
