Roll the dough out thinly onto a tray.

Spread the deeply caramelised onions in an even layer right to the edges, this slow caramelisation is what separates pissaladiere from a plain flatbread.

Arrange the anchovies and olives over the onions in a lattice pattern and bake at 220C for 20 minutes until the edges are golden.
