600gbeef shin, cubed
500gpumpkin or butternut squash, cubed
2potatoes, cubed
1carrot, diced
100gpasta
1onion, diced
4 clovesgarlic, minced
1 tspthyme
1scotch bonnet, whole
1.5Lbeef stock
Instructions

Brown beef. Add onion, garlic and thyme.

Add stock, pumpkin and scotch bonnet. Simmer 30 minutes.

Remove pumpkin. Blend until smooth. Return to pot.

Add potato, carrot and pasta. Simmer 20 minutes.

Remove scotch bonnet. Season. Serve as a rich, thick soup.
