200gjasmine rice
1.5Lchicken stock
200gpork mince
2century eggs, peeled and quartered
4cmfresh ginger, julienned
4spring onions, sliced
3 tbspsoy sauce
2 tbspsesame oil

2 tbspfried shallots
1 tspwhite pepper
Instructions

Wash rice, add to stock and bring to boil.

Reduce heat to lowest setting, simmer uncovered 1 hour stirring occasionally.

Rice should break down completely into a silky porridge — add water if too thick.

Season pork mince with soy and white pepper, cook in oil until caramelised.

Ladle congee into bowls, top with pork, century egg and ginger.
