2New York strip steaks, 3cm thick
4 tbspsoftened butter
2 clovesgarlic, minced
1 tbspfresh parsley, chopped
1 tspfresh thyme leaves
1 tbspolive oil
sea salt and coarsely cracked pepperto taste

Make herb butter: mix softened butter with garlic, parsley and thyme. Roll into a log in cling wrap. Refrigerate.

Bring steaks to room temperature 30 minutes before cooking. Season generously.

Heat a cast-iron pan until smoking hot. Add olive oil.

Sear steaks 3-4 minutes per side for medium-rare. Rest 5 minutes.

Top each steak with a generous slice of herb butter and serve immediately.
