600gsquid tubes, cleaned and cut into rings
3/4 cupplain flour
3/4 cupcornflour
2 tspsea salt
1 tspwhite pepper
1 tspground coriander
1/2 tspchilli flakes
vegetable oilfor frying
lemon wedges and aiolito serve

Pat calamari rings dry.

Mix flour, cornflour, salt, white pepper, coriander and chilli flakes in a bowl.

Toss calamari in seasoned flour to coat, shaking off excess.

Deep-fry in batches at 190°C for 2-3 minutes until crispy and golden.

Drain on paper towel and serve immediately with lemon and aioli.
