150gtomatillos
1 cupwhite onion
4 servingsrefried beans
1 tbspqueso fresco
2 tbspsalsa verde
1/4 cuplime juice
1 tbspolive oil

Instructions

Drain and season the black beans, then roast them over medium-high heat until well browned, about 4 minutes.

Add the corn, tomatillos and white onion, cooking until softened, about 7 minutes.

Stir in the queso fresco, salsa verde and lime juice for a final minute.

Warm the refried beans separately.

Let the beans simmer for about 11 minutes so the flavors meld.
