4potatoes, cubed
4carrots, chunked
1large onion, diced
3 cupslamb or chicken broth
2 tspWorcestershire
1 tspfresh thyme
fresh parsleyto garnish

Brown lamb in batches in oil; remove.

Add onion; sauté until soft. Return lamb with broth, Worcestershire, and thyme.

Simmer 1 hour. Add potatoes and carrots; cook 30 more minutes until tender.
