1kgbeef brisket
1white onion, halved
4 clovesgarlic
2bay leaves
1 tspblack peppercorns
small corn tortillasto serve
diced onion and corianderto serve
salsa verde and rojato serve
Instructions

Simmer brisket with onion, garlic, bay leaves and peppercorns 3 hours until very tender.

Remove brisket and cool slightly, reserve cooking fat.

Dice brisket into small cubes.

Fry in reserved fat over high heat until crispy at the edges.

Warm small corn tortillas on a comal.

Fill each with crispy suadero.

Top with diced onion, coriander and both salsas.
