1white onion, halved
4 clovesgarlic
2bay leaves
1 tspblack peppercorns
corn tortillasto serve
diced white onion and corianderto serve
salsa verdeto serve

Instructions

Place tongue in a pot with onion, garlic, bay leaves, peppercorns and salt.

Cover with water and simmer 3 hours until very tender.

Remove tongue and cool enough to handle.

Peel off the outer skin — it should come off easily.

Dice tongue into small cubes.

Fry diced tongue in a hot pan until crispy at the edges.

Serve in warm corn tortillas with onion, coriander, salsa verde and lime.
