Crispy Pork Carnitas

Mexican slow-cooked pork shoulder, shredded and crisped in the oven with orange and warming spices. Spreading the shredded pork on a tray with its own cooking juices before the final roast is what lets the edges crisp up while the meat itself stays moist underneath.

Ingredients

1.5kgpork shoulder, bone-in
juice of 2oranges
juice of 2limes
4 clovesgarlic
1 tspcumin
1 tsporegano
1 tspsmoked paprika
saltto taste
corn tortillas, salsa, guacamoleto serve

Instructions

Rub pork with spices and salt.

Place in a pot with orange juice, lime and garlic.

Simmer covered 2.5 hours until very tender.

Shred pork.

Spread on a tray with cooking juices.

Roast at 220°C for 15–20 minutes until crispy.

Serve in tortillas with salsa and guacamole.
