600glarge prawns, peeled
400mlcoconut milk
2ripe tomatoes, diced
1large onion, diced
4 clovesgarlic, minced
2cmfresh ginger, minced
2 tspground coriander
1 tspturmeric
1 tspchilli powder
1 tspgaram masala
10curry leaves
1 tspmustard seeds
3 tbspcoconut oil
1 handfulfresh coriander
Instructions

Heat coconut oil, add mustard seeds and curry leaves until they splutter.

Add onion and cook until golden, add garlic and ginger.

Add all ground spices, cook 2 minutes.

Add tomatoes and cook 8 minutes until oil separates.

Add coconut milk and bring to a gentle simmer.

Add prawns and cook 4 minutes until pink and just cooked.

Season generously, scatter with coriander.

Serve with steamed rice or Kerala paratha.
