150gplain flour

Instructions

Mix garlic, spices and fish sauce. Coat chicken. Marinate 4 hours.

Coat in flour. Deep-fry at 175°C for 12–15 minutes until golden and cooked.

Drain on paper towels.

Fry shallots separately until crispy golden.

Serve chicken topped with crispy shallots with sticky rice and sweet chilli sauce.
