300gpork mince
200gnapa cabbage, finely shredded and salted 10 minutes, squeezed dry
2 clovesgarlic, minced
1 tspginger, minced
2 tbspsoy sauce
1 tbspsesame oil
1 tspsake
20gyoza wrappers
oilfor frying
100mlwater for steaming
soy and rice vinegardipping sauce
Instructions

Mix pork, cabbage, garlic, ginger, soy, sesame oil and sake.

Place 1 tsp filling in each wrapper. Wet edges, pleat and seal.

Heat oil in a flat-bottomed pan.

Place gyoza flat-side down. Fry 2 minutes until golden.

Add 100ml water. Cover immediately.

Steam 4 minutes until water evaporates.

Uncover, crisp base 1 more minute.

Serve with soy and rice vinegar dip.
