Ingredients

2 cupsfirm tofu
1/2 cupedamame
2daikon
2 cupsudon noodles
2 tspmirin
to tastemiso paste
1 tbspsesame seeds
to tastedashi
2 tbspolive oil
to tastesalt and black pepper

Instructions

Press the tofu between paper towels to remove excess moisture, then cube it, season, and grill over medium-high heat until well browned, about 10 minutes.

Add the edamame and daikon, cooking until softened, about 4 minutes.

Stir in the mirin, miso paste, sesame seeds and dashi for 3 minutes.

Cook the udon noodles separately according to package directions.

Let the tofu simmer for about 13 minutes so the flavors meld.

Taste and adjust the seasoning.

Serve hot over the udon noodles, garnished with fresh herbs.
