Ingredients

600glarge prawns, peeled with tails on
2 tbsptamarind paste
3 tbspfish sauce
2 tbspsugar
4 clovesgarlic, minced
2red chillies, sliced
2 tbspoil
spring onion and corianderto garnish

Instructions

Mix tamarind, fish sauce and sugar.

Fry garlic and chilli in oil 1 minute.

Add prawns. Cook 2 minutes.

Add tamarind sauce.

Toss on high heat until sauce reduces and caramelises.

Garnish and serve with rice.
