300gdried marrowfat peas, soaked overnight
1Lcold water
1 tspbicarbonate of soda for soaking
1 tspsalt
1 tspsugar
2 tbspbutter
salt and white pepperto taste

Instructions

Soak peas overnight with bicarb. Rinse well.

Cover with cold water in a pot. Bring to a boil.

Simmer 30-40 minutes, stirring occasionally, until peas collapse to a thick puree.
