6large brown onions, thinly sliced
4 tbspbutter
1 tbspolive oil
1 tspsugar
1 cupdry white wine
1.5Lbeef stock
4 thick slicesFrench bread, toasted
200gGruyere, grated
fresh thymefew sprigs
salt and pepperto taste
Instructions

Cook onions in butter and oil with sugar over medium-low heat 45 minutes until deeply caramelised.

Add wine and thyme. Cook 5 minutes.

Add stock. Simmer 20 minutes. Season.

Ladle into oven-safe bowls. Top with toast and mound of Gruyere.

Grill until cheese is golden.
