200gjasmine rice
1.5Lchicken stock
200gcooked chicken or pork (optional)
2century eggs, peeled and quartered
3 cm piecefresh ginger, julienned
3 tbsplight soy sauce
2 tspsesame oil
spring onions and fried shallotsto garnish
pickled vegetables or chilli oilto serve
Instructions

Combine rice and stock in a pot. Bring to boil.

Stir vigorously, reduce heat to very low.

Simmer 45 minutes–1 hour, stirring occasionally, until very thick and creamy.

Season with soy sauce.

Ladle into bowls.

Top with century egg, ginger, spring onion and fried shallots.

Finish with sesame oil and chilli oil.
