Ingredients
500gdried gigantes or butter beans, soaked overnight
400gcrushed tomatoes
1large onion, diced
4 clovesgarlic, minced
2 stalkscelery, diced
1 tspdried oregano
1 tspsugar
100mlolive oil
1 handfulfresh parsley
crusty breadto serve
Instructions

Boil soaked beans in fresh water 45 minutes until nearly tender, drain.

Fry onion and celery in olive oil until soft, add garlic.

Add crushed tomatoes, oregano, sugar and season.

Simmer sauce 10 minutes.

Add parboiled beans to tomato sauce.

Transfer to a baking dish, add enough water to just cover beans.

Drizzle generously with olive oil.

Bake at 180C for 1 hour until sauce is thick and beans are very tender.
