Ingredients
300gyellow toor dal
200gfresh spinach, chopped
1white onion, diced
3 clovesgarlic, minced
2cmfresh ginger, minced
2ripe tomatoes, diced
1 tspturmeric
1 tspground cumin
3 tbspghee or vegetable oil
1 tspcumin seeds
1 tspmustard seeds
2dried red chillis
1 handfulfresh coriander
Instructions

Simmer dal in 1L water with turmeric until completely soft, about 30 minutes.

Fry onion in ghee until golden, add garlic and ginger.

Add tomatoes and ground cumin, cook 8 minutes.

Add spinach and cook until wilted.

Add tomato spinach mixture to dal, simmer 10 minutes.

For tadka: heat remaining ghee, fry cumin seeds, mustard seeds and dried chillis.

Pour sizzling tadka over dal.

Scatter with coriander and serve with rice or roti.
