Ingredients

2 cupslong-grain rice
1 cancrushed tomatoes
3red bell peppers, blended
2scotch bonnet peppers (to taste)
1large onion, diced
3 clovesgarlic
3 cupschicken broth
2 tspsmoked paprika
1 tspcurry powder
3 tbspoil
fresh parsleyto garnish

Instructions

Blend tomatoes, peppers, and half the onion into a purée.

Fry purée in oil until it darkens and reduces, about 20 minutes.

Sauté remaining onion and garlic; add spices; add purée.

Stir in rice; add broth; bring to boil.

Cover tightly; cook on lowest heat 30 minutes. Stir gently; rest 10 minutes.
