4 piecesfirm tofu
1 cupedamame
1 cupdaikon
1/2 cupscallions
4 servingssoba noodles
1 tspmiso paste
1/4 cupmirin
1 tbspolive oil
to tastesalt and black pepper

Press the tofu between paper towels to remove excess moisture, then cube it, season, and sear over medium-high heat until well browned, about 8 minutes.

Add the edamame, daikon and scallions, cooking until softened, about 8 minutes.

Stir in the miso paste and mirin for 2 minutes.

Cook the soba noodles separately and drain.

Let the tofu simmer for about 16 minutes so the flavors meld.
