Ingredients

1kgwaxy potatoes, boiled and sliced
4 tbspaji amarillo paste
200gqueso fresco or feta
200mlevaporated milk
3 tbspvegetable oil
3cream crackers
2hard-boiled eggs, halved
black olives and lettuceto serve

Instructions

Blend aji amarillo paste, queso fresco, evaporated milk, oil and crackers until smooth.

The sauce should be thick and bright yellow — add more milk if too thick.

Season with salt.

Arrange lettuce on a platter.
