Ingredients

1kggreen-lipped mussels, scrubbed
1 cupdry white wine
3medium potatoes, diced
1onion, diced
2 stalkscelery, diced
2 clovesgarlic, minced
3 tbspbutter
2 tbspplain flour
2 cupsfish or chicken stock
1 cupcream
fresh dill and parsleyto garnish
salt and white pepperto taste

Instructions

Steam mussels in wine 4 minutes until open. Remove meat. Strain and reserve liquid.

Sauté onion, celery and garlic in butter 5 minutes.

Add flour. Add reserved liquid and stock. Add potatoes.
