A hearty New Zealand seafood chowder built on plump green-lipped mussels and potato. Steaming the mussels first and reserving their liquid to go into the chowder base is what carries their briny flavour straight through the finished soup, rather than leaving it tasting like plain cream.

Ingredients

1kggreen-lipped mussels, scrubbed
300gwaxy potatoes, diced
1onion, diced
3 clovesgarlic, minced
200gbacon, diced
2 cupsfish stock
1 cupthickened cream
1 cupwhole milk
2 tbspbutter
2 tbspplain flour
fresh parsley and crusty breadto serve

Instructions

Steam mussels in a covered pot with 1/2 cup water until opened. Remove meat and reserve liquid.

Fry bacon, then sauté onion and garlic in the same pot.

Stir in butter and flour. Gradually add stock, mussel liquid, cream and milk.

Add potatoes and simmer 15 minutes until tender.

Add mussels. Heat gently and season. Serve with parsley and crusty bread.
