New Orleans flambeed bananas in a brown sugar and rum butter sauce, served over vanilla ice cream. Tilting the pan carefully to ignite the rum, rather than pouring more in once it's already flaming, is what keeps the flambé controlled while still burning off the harsh alcohol.

Melt butter in a wide pan over medium heat.
Add brown sugar and cinnamon, stir until dissolved.
Add banana halves cut side down.
Cook 2 minutes until caramelised on the bottom.
Add rum to the pan.
Carefully tilt the pan to ignite the rum, or use a long match.
Let flames die down naturally, spooning sauce over bananas.
Serve immediately over vanilla ice cream with sauce poured over.
