375gall-butter puff pastry
6egg yolks
300gsugar
40gcornflour
300mlwhole milk
200mldouble cream
1cinnamon stick
zest of 1lemon
cinnamon powderto serve
Instructions

Make custard: dissolve sugar and cornflour in milk. Add cream, cinnamon and lemon zest. Heat until thick. Beat in yolks.

Roll pastry into a log, slice into 12 rounds.

Press rounds into a greased cupcake tin, moulding up the sides.

Fill with custard. Bake at 250°C for 12–15 minutes until deeply caramelised on top.

Dust with cinnamon. Serve warm.
