400gflat fresh rice noodles
200gprawns, peeled
2Chinese lap cheong sausages, thinly sliced
3eggs
4 clovesgarlic, minced
100gbean sprouts
3spring onions, cut in lengths
3 tbspdark soy sauce
2 tbsplight soy sauce
1 tbspoyster sauce
1 tspsugar
4 tbsplard or vegetable oil
Instructions

Separate noodles carefully without breaking.

Heat wok with lard over maximum heat until smoking.

Fry garlic 10 seconds, add lap cheong and fry until fragrant.

Add prawns and cook until just pink.

Push everything aside, crack eggs in and scramble briefly.

Add noodles and all sauces, toss vigorously — let noodles sit to char slightly.

Add bean sprouts and spring onions, toss 30 seconds and serve.
