3potatoes, diced small
3ripe tomatoes, diced
1white onion, diced
3 clovesgarlic, minced
2carrots, diced
1 tspground cumin
1 tspdried oregano
1 tspsmoked paprika
3 tbspvegetable oil
1 handfulfresh coriander
Instructions

Brown beef mince in oil over high heat, breaking up lumps.

Add onion, carrot and cook 5 minutes.

Add garlic, cumin, oregano and paprika.

Add tomatoes and cook 5 minutes.

Add potatoes and enough water to just cover.

Simmer 15 minutes until potatoes are tender and mixture is dry.

Season, scatter with coriander. Use to fill tacos, peppers or serve with rice.
