Ingredients

600gwhite fish fillets
12corn tortillas
400gcrushed tomatoes
80ggreen olives, pitted
3 tbspcapers
1white onion, diced
3 clovesgarlic, minced
2jalapeños, sliced
1 tspdried oregano
3 tbspolive oil
1 handfulfresh parsley

Instructions

Sauté onion in oil until soft, add garlic.

Add tomatoes, olives, capers, jalapeños and oregano.

Simmer sauce 10 minutes until slightly thickened.

Nestle fish fillets in sauce, cook 8 minutes until just done.

Break fish into large flakes in the sauce.

Warm corn tortillas.
