400gflat rice noodles
100gcockles or mussels
100gprawns, peeled
1lap cheong (Chinese sausage), sliced
2eggs
2cloves garlic, minced
2 tbspdark soy sauce
2 tbspfish sauce
100gbeansprouts
2spring onions
lard or oilto fry
chilli pasteto taste
Instructions

Heat wok until smoking. Add lard.

Fry garlic and sausage 1 minute.

Add noodles. Toss over high heat 2 minutes.

Push to side, scramble eggs. Mix through with prawns and cockles.

Add sauces and chilli. Add beansprouts and spring onions. Toss 30 seconds. Serve immediately.
