A Southern summer dessert of sweet peaches under a golden drop biscuit crust. Tossing the peaches with cornflour before they go into the dish is what thickens their juices as they bake, keeping the filling syrupy rather than watery under the biscuit topping.

Ingredients

1kgfresh or canned peaches, sliced
1/2 cupcaster sugar
1 tbspcornflour
1 tspcinnamon
1 cupplain flour
1 cupcaster sugar
1 tspbaking powder
pinchsalt
3/4 cupbuttermilk
1/3 cupmelted butter
vanilla ice creamto serve

Instructions

Toss peaches with sugar, cornflour and cinnamon. Pour into a 23x33cm baking dish.

Mix flour, sugar, baking powder and salt. Stir in buttermilk and melted butter until just combined.

Drop spoonfuls of batter over the peaches.

Bake at 180°C for 40-45 minutes until topping is golden and peaches are bubbling.

Serve warm with vanilla ice cream.
