Foul Ethiopian
A fava bean stew mashed with spiced butter, lemon and jalapeño — an Ethiopian breakfast staple. Frying the garlic and jalapeño in niter kibbeh, the Ethiopian spiced butter, before the beans go in is what infuses that distinctive spiced-butter flavour straight through the dish.
