3 tbspolive oil
3 tbspbutter
4 clovesgarlic
3 sprigsthyme
500mlred wine
500mlbeef stock
1 tbspbutter for finishing sauce

Season tenderloin generously. Sear all over in oil.

Add butter, garlic and thyme. Baste while cooking.

Roast at 200°C for 20-25 minutes for medium-rare. Rest 10 minutes.

Deglaze pan with wine. Add stock. Reduce to sauce consistency.

Finish sauce with butter. Slice tenderloin.
